Pumpkin Spice Brownies

When my son and I were invited to Friendsgiving, I was excited… until I asked my friend, the hostess, what I should bring, “Something sweet”. I totally panicked. Baking is not my forte.It requires way too much precision. Or as my mom says… you have to follow the instructions. I guess the free-spirit in me prefers cooking where there is a little more room for error.

I almost asked if I could bring an appetizer instead because I had just learned how to make artichoke dip for a holiday party (tis’ the season!). I didn’t ask, though. Instead, I decided to face my fears (seriously, I think I have a fear of baking) and took to Pinterest in search of a recipe.

I wanted to do something easy yet festive. I came across two ingredient recipe for Pumpkin Brownies.

Perfect!

If you’re a little baking inept or maybe just pressed for time, I highly suggest giving these a try.

All you need is a box of family size brownie mix and 15 ounces of pumpkin pie filling (I used half of the large can but they do sell 15oz cans).

Preheat oven to 350.

Pour the brownie mix and pumpkin pie filling in mixing bowl.

Mix on medium with a hand mixer.

Line a 9×9 baking pan with foil and pour in the pumpkin brownie mix. (This is my favorite bakeware set.)

Bake for 35 minutes.

Check the center to make sure they are cooked through.

Let brownies cool before frosting them. I made frosting using granulated sugar (thank you YouTube!) and added food coloring.

If brownies are still warm let them chill in the refrigerator for about 10 minutes.
